Gluten Free Ginger Dressing

Hi guys!  I'm sorry I haven't posted in a while-  it was actually my 'blogiversary' a couple of days ago- but I've bee so busy with homework!  I have SO MANY PROJECTS DUE next week. But I wanted to share this recipe wit you- a gluten-free vegan recipe :)


Ginger Dressing:
Vegan, Gluten Free, Nut Free
  • 1/4 chopped onion
  • 1/2 garlic clove (peeled and chopped)
  • 1-2 Tbsp flax oil
  • 1 inch peeled and chopped fresh ginger
  • 1 Tbsp Tamari
  • 1 tomato
  • 1/2 tsp stevia
  • Salt and pepper to taste
Directions:  Prepare all ingredients by washing, peeling, and chopping, removing any unwanted parts.  Add first six ingredients ad puree in ablender or food processor until smooth.  Add stevia and seasonings to taste and if it's too thick.  Store in the fridge.  Makes: 1 cup of dressing.

It's delicious and very healthy!  Almost all of the ingredients are fresh and plant based.  I love recipes like this!

I used it on top of quinoa, tofu, grilled sweet peppers, roasted beets, carrots, and spinach.  Yum!


Since that was a healthy, gluten free dinner idea, here's a healthy, gluten free breakfast idea:
Vegan Breakfast Banana Split:
  • 1 banana, split in half
  • 1 Tbsp ground fla
  • 2 Tbsp pb2 + 1 Tbsp almond milk
  • 1/2 Tbsp dried cranberries
  • 2 crushed peans
  • 2 Tbsp vegan, gluten free chocolate chips (they're out there, I promise!)
Directions:  Heat split banana up for 30 seconds in the microwave.  Add all of the toppings and heat for another 30 seconds.  Love Adair for making this amazing recipe.  Serves: 1 very happy morning person.
To continue the GF theme, here's an amazing snack to fit a vegan gluten free diet:

Gluten Free Cereal Bowl:
  • 1 cup Gluten Free cereal, such as Erewhon or Nature's Path, or make yourown Gluten Free granola (most recipes will be if you have gluten free oats)
  • 1/2 sliced banana
  • 2  sliced strawberries
  • 2 Tbsp blueberries
  • 1 Tbsp dried cranberries
  • 4 crumbled pecans
  • 4 crushed banana chips
  • 1-2 cups almond milk
Directions:  Add everything to a bowl and munch :D

I love huge, healthy bowls of Bran, nuts, and fruits.  Vegan powa!
