Lunch Tomorrow: Lemon Chickpea Salad
Hi guys! You can never go wrong with lemon and chickpeas. That's a good life lesson for you.
I'm sorry that oatmeal and salads come up so often on the blog, but that's what I eat.

Lemon Chickpea Salad:
Original Recipe
Salad:
- 3 romaine leaves, rinsed and torn into bite sized pieces
- 1 can chickpeas, drained and rinsed
- 1/3-1/2 cucumber, chopped
- 1 carrot, chopped
- 1 roma tomato, deseeded amd chopped
- Juice of 1 lemon
- 1 Tbsp olive oil
- 1 tsp honey
- 1 tsp dijon mustard
- 1 garlic clove, minced
- Pinch of herb salt

Always in a peanut butter jar!
We currently have two empty peanut butter jars in our fridge right now, so I figured I had better make some overnight oats so we'll actually have room for semi full peanut butter jars (they're never all the way full in our house :).
Exercise Challenge- May 14th, 2012
16 Burpees. We're getting higher and higher! Last night when I was doing my burpees, I started to sweat! That's an exercise challenge!

Looks great! That reminds me of one of my favorite salads, chickpeas,tomatoes, lemon juice, lemon zest, good olive oil, good feta, finely chopped rosemary and S n P. Also...I finally incorporated burpees into my workout at the track tonight! Of course at your suggestion and I tried to name them all, this one for the trees, this one for the flowers, this one for the clouds. Those are a great heart rate booster in between laps for me. Thanks!
