Vegan on the Cheap: Meals

Hi guys!  So as you may or may not know, my brother, Alex, is going to college in a couple of days. (AH!  Days!)  So I thought I'd make a food post for him because, as I've said in the past, that boy can eat.  Alex is vegan and will have the meal plan, but there will be times when he's hungry and must make food.  I want to share some easy, cheap recipes for anyone who eats a low budget, animal-friendly diet.

And if you're thinking about becoming vegan and need some ideas, these meals are an effortless way to ease into the lifestyle!

Breakfast:


  • Cereal with Almond Milk (I'm always happy to direct people to OhSheGlows!)
  • Bananas + PB on toast




  • Soy Yogurt Parfait (Soy or Coconut or Almond Yogurt, Almonds or Peanut Butter, Granola, Fruit)


Lunch:


  • Rice + Beans
  • Grain Salads (Grain of choice + Veggies + Vinaigrette)
  • PB + J
  • Homemade Sushi (this can be a mess, so you can make my deconstructed sushi bowl)
  • Tostadas (take corn tortillas and toast them until golden) + Refried Beans 
  • Beans on Toast
  • Potatoes or Sweet Potatoes
  • Edamame 
  • Large Salads (made with vegetables, chickpeas, and lemon-mustard vinaigrette)

Dinner:


  • Homemade Veggie Burgers (on pita, bread, or a bun)
  • Black Bean Soup (sometimes I just rinse a can a black beans and throw them in a pot with some salsa)
  • TVP Bowl
  • Stir-fries made with peppers, carrots, onions, and garlic with tofu or edamame
  • Corn Pasta (try this recipe!) 



Even if you don't follow these suggestions exactly, it's almost always cheaper to make your own food than to eat out.
