Lunch Tomorrow: Lemon Chickpea Salad

Hi guys!  You can never go wrong with lemon and chickpeas.  That's a good life lesson for you.

Also peanut butter and banana.  But that's a different part of my life [breakfast].  This is dinner (and lunch tomorrow).

I'm sorry that oatmeal and salads come up so often on the blog, but that's what I eat.

Lemon Chickpea Salad:
Original Recipe

Salad:
  • 3 romaine leaves, rinsed and torn into bite sized pieces
  • 1 can chickpeas, drained and rinsed
  • 1/3-1/2 cucumber, chopped
  • 1 carrot, chopped
  • 1 roma tomato, deseeded amd chopped
Dressing:
  • Juice of 1 lemon
  • 1 Tbsp olive oil
  • 1 tsp honey
  • 1 tsp dijon mustard
  • 1 garlic clove, minced
  • Pinch of herb salt
Directions:  Wash all veggies and beans.  Tear the romaine and divide evenly into bowls.  Pour about 3/4 cup chickpeas over each bed of romaine.  Chop the cucumber, carrot, and tomato (or veggies of choice) and mix together and sprinkle with salt and pepper.  Pour half of the veggie mixture into each bowl and add desired amount of dressing to each.  Set in the fridge to marinate or serve right away.  Serves:  2

It tasted really good!  It was so light, but filling and full of fiber, protein, and a little healthy fat.  I served it with toasted pita triangles and an apple.  Also green tea with lemon...

Pouring the dressing (dramatically):

I love using little jars for dressing!

I have an exciting recipe to share with you guys tomorrow!  And I know that if you're anything like me, you'll love it.

Also coming up tomorrow (just for me), are overnight oats:

Always in a peanut butter jar!

We currently have two empty peanut butter jars in our fridge right now, so I figured I had better make some overnight oats so we'll actually have room for semi full peanut butter jars (they're never all the way full in our house :).

Exercise Challenge- May 14th, 2012
16 Burpees.  We're getting higher and higher!  Last night when I was doing my burpees, I started to sweat!  That's an exercise challenge!

I have to go practice piano (have to learn Fur Elise by Thursday O.O ).  I hope you guys enjoy your tomorrow as much as I will (I realize I already have planned my breakfast and lunch).  Have a good night!

P.G.N.  Check out my new Recipes page- finally made one and this will be up on it tomorrow (I'll put it on the list!)

  1. Looks great! That reminds me of one of my favorite salads, chickpeas, tomatoes, lemon juice, lemon zest, good olive oil, good feta, finely chopped rosemary and S n P. Also...I finally incorporated burpees into my workout at the track tonight! Of course at your suggestion and I tried to name them all, this one for the trees, this one for the flowers, this one for the clouds. Those are a great heart rate booster in between laps for me. Thanks!
