Eat The Rainbow Pasta Salad + An Arm Workout!
Hi guys! I made this for Christmas dinner for us vegans to eat and it was a big hit! It's perfect for potlucks, picnics, or gatherings. When you're vegan (or vegetarian, lactose intolerant, nut allergic, etc.) it can be hard for you to find food that you can eat, and even if you do, you don't know exactly what's in it, so making something that's already allergen free/ diet friendly makes an event much less stressful. Even people who aren't restricted from any foods love pasta! If you're gluten free, I would suggest using a grain such as rice or quinoa.
2. Chop the veggies and cilantro:

4. Mix them all together:
Then chill...
THEN eat.

-50 Mountain Climbers
-40 'Ups' (20 Push Ups, 20 Press Ups)
-30 Tricep Dips
-20 Second Plank
-10 Elbow To Plank's

Vegan, Nut Free, Soy Free
- 1 box whole wheat pasta, cooked according package directions
- 1/2 cucumber, sliced
- 1/2 red bell pepper
- 3-5 radishes, chopped finely
- 2 carrots, peeled and chopped
- 3 green onions, chopped
- 1/2 cup cilantro (or parsley), minced
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1 lemon, juiced
- 1/2 tsp dried oregano
- Salt and pepper, to taste
