Eat The Rainbow Pasta Salad + An Arm Workout!

Hi guys! I made this for Christmas dinner for us vegans to eat and it was a big hit! It's perfect for potlucks, picnics, or gatherings.  When you're vegan (or vegetarian, lactose intolerant, nut allergic, etc.) it can be hard for you to find food that you can eat, and even if you do, you don't know exactly what's in it, so making something that's already allergen free/ diet friendly makes an event much less stressful.  Even people who aren't restricted from any foods love pasta!  If you're gluten free, I would suggest using a grain such as rice or quinoa.


Eat The Rainbow Pasta Salad:
Vegan, Nut Free, Soy Free
  • 1 box whole wheat pasta, cooked according package directions
  • 1/2 cucumber, sliced
  • 1/2 red bell pepper
  • 3-5 radishes, chopped finely
  • 2 carrots, peeled and chopped
  • 3 green onions, chopped 
  • 1/2 cup cilantro (or parsley), minced
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 lemon, juiced
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
Directions:  While the pasta is cooking, WASH and chop all of the vegetables and prepare the dressing:  whisk oil,  vinegar, lemon, and oregano.  Rinse the pasta with cold water and add to bowl.  Mix in vegetables, herb, and dressing (you may not have to use all of it- save any leftovers for salads).  Mix and add salt and pepper to taste.  Chill for 30 minutes- overnight before serving.  Makes:  ~10 cups

THEN eat.
