Vegan On The Cheap: Sushi Bowl

Hi guys!  I went to Atlanta to visit my Dad, brother,and Stepmom the other weekend.  I was starving by the time I got there, so we went to the store to pick up some groceries for dinner.  We took Alex (my brother) with us even though he had already eaten a pizza for dinner (and no, I didn't say a slice of pizza, I said a pizza- that boy can eat!)

We picked up some couscous, frozen edamame, a cucumber, a red pepper, an avocado, some almond buter and a couple of bananas (not related but delicious).  We checked out (rather quickly- we went to the Sketch Master General Kroger to pick up the goodies) and went home so I COULD EAT.  As soon as we got there I immediately went into their kitchen and started cooking up a storm.  While the couscous cooked, I steamed the edamame and chopped all of the veggies and avocado (and ran to the bathroom- I got a large tea from Starbucks on the way to Atlanta) and dinner was done in 10 minutes. 


Deconstructed Sushi Bowl:

  • 1/2 cup couscous, dry or rice
  • 1/2 cup water
  • 1/2 avocado, chopped
  • 1/2 cucumber, chopped
  • 1/2 red pepper, chopped
  • 3/4-1 cup steamed edamame, shelled
  • Ponzu sauce, soy sauce, or tamari, to taste
Directions:  Bring the water to the boil and add grain.  Cover and remove from heat, letting sit for five minutes.  Steam your edamame and chop your veggies/ avocado while you wait.  Add cooked couscous to bowls and layer on top your desired veggies.  Serve with ponzu, soy sauce, or tamari.  Serves: 2-3.


But even though it took such little time to make, my brother was hungry by the time I was done.  I found a big bowl in their cabinet and scooped him a large serving with plenty of veggies and avocado.  Here's his serving:

Like I said, that boy can eat!!!

I've been trying to post those pictures for a while, but they've been so darn stubborn!  And I was so excited to share that bowl with you because my brother liked it, which means it was tested on more than just me!

  1. With your hair pulled back like that it makes you look like my daughter-in-law...she is 19 but can look like she is 14 or 15....love looking young...it will never get old to you. Trust me ;)
