Pack Your Lunch!

Hi guys!  As you guys know, August is coming on fast, and with it the start of school. 

Packing your lunch is cheaper, healthier, and accustomed to your taste buds.  Being vegan, I kind of have to pack my lunch to ensure that my meal is meat-, egg-, and dairy-free.  I've been packing my own lunch for years, even when I was in elementary school.  (Thank goodness for PB + J's.)  Since then, my school lunches have evolved.

If I have convinced you to try veganism- or vegan before six- and to pack your lunch, here are some ideas.

Packed Lunch Ideas:


  • Quinoa, chickpeas, salsa, hummus, red pepper, green onion, and cilantro mix (mmmm)
  • Mary's Crackers
  • Grapes
  • Sandwich of avocado, tomato paste, hummus, spring mix, sprouts, and salt + pepper
  • Carrots and hummus
  • Nectarine
  • 1/2 Pita with Not Tuna Spread and a roma tomato
  • Granola Bar
  • Apple-pear
  • Assorted veggies
  • Sandwich of tomato paste, hummus, pickle, and romaine over a bad of romaine + cherry tomatoes + asparagus dressed in olive oil and honey
  • Pineapple and cranberries
  • Broccoli and asparagus
  • Peanut butter, banana, and honey wrap surrounded by baby carrots
  • Lettuce and celery dressed in olive oil and honey
  • 2 Granola Bars
  • Apple
  • Salad of mixed greens, brocolli, cauliflower, celery, carrots, red pepper, tomato, basl, nutritional yeast, sesame seeds, and freshly ground black pepper
  • 1 Whole Wheat Pita
  • Bag of celery and carrots
  • Apple
  • Rainbow Couscous Salad over romaine
  • Marinated tofu cubes
  • Blueberries
  •  Apple Pie Laraber (not pictured but eaten)
  • Ezekial Sesame Roll (which are really good and I highly suggest them) with spicy mustard, avocado, tomato, spinach, sprouts, and hummus
  • Bag of celery and carrot sticks
  • Apple
  • Bag of cashews

  • Apple 
  • 1/2 Pita stuffed with guacomle and black beans
  • Bag of veggie sticks (red peppers, carrots, celery)
  • Banana Bread Larabar (YUM)
  • Leftover tempeh from Mellow Mushroom
  • Red peppers, carrots, and sprouts with hummus
  • Cherry Pie Larabar
  • Apple

  • 1 pita
  • 1/2 slab marinated tofu
  • 1/2 cup tabbouleh salad mixed with 1/2 avocado
  • Apple Pie Larabar (so good!)
  • Apple
  • Sandwich with Ezekiel bread, vegannaise, guacamole, two tofu slabs, spinach, and sprouts
  • Green peppers and celery
  • Orange

  • Tofu, 1/2 sweet potato, celery, green peppers, with sriracha
  • 1/2 orange (that wasn't good!)
  • Blueberry Muffin Larabar

  •  Salad of mixed greens, tomato, celery, peppers, tofu, guacamole, and nutritional yeast
  • Peanut Butter Cookie Larabar (when slightly warm, my favorite flavor)
  • Huge Apple
  • Salad of mixed greens (we had some to use up!), celery, tofu, hummus, sprouts, and nutritional yeast
  • Apple
  • PB + J (I actually ate half of this with my apple for a snack, then the rest of it with my salad for lunch)

  • Salad of spinach, tomatoes, sprouts, basil, and cucumber (basil made it!)
  • Curried Chickpeas with raisins, red peppers, orzo, and cilantro (so good!  I'll try a remake!)
  • Soooo Delicious Chocolate Coconut Yogurt

  • Wild Rice mixed with apple cider vinegar, olive oil, spices, dried cranberries, butternut squash, and green onions
  • Mexican Salad!  Spring mix, tomatoes, cucumbers, red peppers, olive oil, nutritional yeast, lime
  • NuGo Dark bar (THIS WAS CRAZY GOOD)

  •  2 cups black bean soup mixed with salsa + nutritional yeast sprinkle
  • 1 1/2 cups whole wheat couscous with olive oil, lemon, salt, and pepper
  • 1/2 avocado (for the soup)
  •  1 1/2 cup pearled couscous, cranberry, and walnut salad
  • Real salad of spinach, tomatoes, cukes, sprouts, and salsa
  • Bag of walnuts, dark chocolate covered goji berries, and raisins
  • Plain Coconut Yogurt

  • Kale Salad:  1 cup kale, 1/2 cup edamame, 1/4 cup shredded carrots, 1/4 cup sprouts, 1 Tbsp dried cranberries, 1 tsp hemp seeds, 1/4 lemon, 1 Tbsp olive oil (marinated!)
  • Trail Mix
  • Yellow Bell Pepper, Cherry Tomatoes, and Sugar Snap Peas
  • Trader Joe's Apple Cranberry Muffin

  •  Salad with avocado, bell peppers, sprouts, and lemon vinaigrette
  • Flat Out with hummus, nutritional yeast, and tofu
  • Trail Mix: banana chips, dried cranberries, almonds, and walnuts

    on that "not tuna spread" does it matter if the almonds are raw? toasted?

  2. These ALL look so good! Enjoyed my leftover Subway sandwich today! Looking forward to the rest of the salad you made before we went to Lisa's. It's already in the fridge at work waiting on me!
